Apple Streusel Slice Women’s Weekly

Delicious apple crumble-like bars. I suspect any relatively dry fruit filling would work here!


Make streusel topping in a food processor. Gather dough in plastic wrap and keep in freezer for an hour.


Preheat oven to 180C. Grease a 20cm x 30cm slice pan and line with baking paper.


Beat butter, sugar and egg yolks with an electric mixer until pale and fluffy.

Add flour and custard powder, and press mixture into prepared pan.


Bake the base for 25 minutes, until golden brown. Let cool for 15 minutes.


Place apples, honey and lemon rind in a medium saucepan over medium heat. Cook, covered, stirring occassionally for 5 minutes or until softened. Let cool for 15 minutes.


Spread cooled apple mixture onto cooled base. Crumble topping over the apples.

Bake for 20 minutes or until lightly browned. Let cool in the pan.
