Tasty pasta bake - makes a few dishes, you’ve been warned. Recipe also says “2 serves” which is hilarious.
Preheat oven to 220C and prepare a casserole dish.
1butternut pumpkin
Roast pumpkin in the oven until tender. You can boil instead if needed, but this is nicer. Set aside when roasted and drop oven temperature to 180C.
300 gpenne pasta
Cook pasta until al dente and set aside.
1 Tbspbutter10button mushrooms, sliced- thyme
2 Tbspflour
Add butter and mushrooms to the saucepan, and saute for 5 minutes. Stir in flour to coat.
1 cupmilk60gcheese1 cupspinacha pinchnutmeg
Add remaining ingredients to the mushroom mixture and stir until thickened and combined. Season with salt, pepper and nutmeg.
Combine pumpkin, pasta and mushrooms and add to casserole dish. Bake for 20 minutes, until golden.
