Victoria Sponge Cake Frame by Frame Baking

Simple sponge which is good for afternoon tea, though slightly eggy. Such is the way of the sponge.


Preheat oven to 180C and line two 20cm cake tins.


Combine dry ingredients in a bowl. Add wet ingredients and beat well, until smooth.

Divide between two pans and smooth the surface. Bake for 25 - 30 minutes.


Once cooled, sandwich together with jam, cream, and halved strawberries. Dust the top with icing sugar.
